Chef's Beachside Garden

Nestled between the sparkling Gulf of Mexico and the new Deck at 560 restaurant lies a passion Project of the resort’s culinary team; a garden built entirely with repurposed materials from recent building renovations. Tropical fruit trees, citrus trees, herbs, flowers and vegetables grown on property and tended with love, will grace the dinner and banquet plates of our distinguished guests. A backdrop of sea grape laden dunes and World class sunsets makes pulling weeds more of an escape than a chore. The constraints on what can be grown, due to close proximity to the water’s edge and natural sea spray, has provided a wonderful and unique opportunity for growing indigenous plants, heirloom varieties and alternative crops that haveĀ  a high salt tolerance. Exotic and rare edible varieties are thriving in this environment

Garden

Using several low impact horticulture methods including permaculture: organic pesticides, fertilizers and herbicides; as well as on site composting; secures a minimal impact to this fragile ecosystem. Paradise Coast Beaches attract over 1.5 million visitors annually; and, also, provide a nesting reserve for Loggerhead Sea Turtles, ensuring the survival of a protected species. Plants are watered with an efficient drip irrigation system, recycled water from the kitchen. Future plans include a cistern to capture rain water during summer months when the plantings are thirstiest. This system will allow us to continue to Office fresh produce, even outside of the normal growing season. Realizing that eco-tourism is of primary importance today and in the future, we seek to educate the consumer, produce nutrient dense fruits and vegetables that both reduce our carbon footprint and provide a unique gastronomical experience, and funnel kitchen waste away from landfills by using composted materials in the creation of rich salty loan for an optimal growing practice.
